Banga soup is the pride of the Niger Delta. Made from fresh palm fruit extract, this soup has a rich, slightly tangy flavour that is wholly distinctive.
The palm fruit extraction is the most labour-intensive step. Fresh palm fruits must be boiled until soft, then pounded in a mortar and squeezed with warm water to release the extract.
